What is Retail HACCP?
The term “ HACCP (hazard analysis critical control point)” is a food hygiene
management system usually applied to all products in food processing plants
(mandatory requirements to all food industry fields in Europe, and mandatory
requirements in some food industry fields in the United States).
The term Retail HACCP is applied to retailers where food is delivered directly
to consumers, such as supermarkets, restaurants, and catering facilities.
According to the revised Food Sanitation Law in Japan that will be enforced
in June 2020, HACCP will be applied to all food businesses as a part of
food supply chain (food production / processing, cooking to sales).
